Musings: Creme Brulee

Time to dust off the blowtorch and try Ina’s Creme Brulee! Are you making any substitutions? How does her recipe stack up to others you’ve tried? We’ll start posting these Thursday, Nov. 12.

  1. I’ve always wondered what to do about this if I have no torch. I hear you can use a broiler, but I’ve never seen it done well. Suggestions?

  2. I bought 35% cream to make this but was wondering if 15% could pass for “heavy cream”?

  7. Ohhh, yes. I have made Ina’s creme brulee many times. Follow her recipe to the letter. It is sooo good.
    Come to think of it, I have NEVER made anything that wasn’t spectacular from her.
