New Challenge: Barefoot on a Budget!

This month has an extra Thursday, so we wanted to throw out an extra challenge:

Can YOU do Barefoot on a Budget?

For months, many of us have chased down Ina’s recommended gourmet ingredients and tried to replicate her recipes down to the pricey cocoa powder. But for this challenge, we’re going to vote on one of Ina’s recipes and see if we can get Barefoot results on a barebones budget.

First, we’ll take a vote on the group recipe. Please choose ONE of the following five options, keeping in mind that you can change the ingredients to suit your tastes :

    1. Lobster Cobb Salad Rolls

    2. Bruschetta with Sauteed Sweet Peppers and Creamy Gorgonzola

    3. Easy Lobster Paella

    4. Truffled Fillet of Beef Sandwiches

    5. Ice Cream Bombe

Then, your mission – should you choose to accept it – is to take the winning recipe and make it more budget-friendly. You can change the ingredients, cooking method or even the format of the recipe (i.e. turning a cake into pancakes), as long as your end result somewhat resembles the original recipe. Bonus points if you include the cost of the original vs. your Barefoot on a Budget spin!

Please post your Barefoot on a Budget entry by Thursday, April 30.

***Don’t forget to vote (in the comments) for which recipe we should tackle this month! Use the number of the recipe, if you like. The chosen recipe will be posted here Sunday night.***
