This month has an extra Thursday, so we wanted to throw out an extra challenge:
Can YOU do Barefoot on a Budget?
For months, many of us have chased down Ina’s recommended gourmet ingredients and tried to replicate her recipes down to the pricey cocoa powder. But for this challenge, we’re going to vote on one of Ina’s recipes and see if we can get Barefoot results on a barebones budget.
First, we’ll take a vote on the group recipe. Please choose ONE of the following five options, keeping in mind that you can change the ingredients to suit your tastes :
2. Bruschetta with Sauteed Sweet Peppers and Creamy Gorgonzola
4. Truffled Fillet of Beef Sandwiches
Then, your mission – should you choose to accept it – is to take the winning recipe and make it more budget-friendly. You can change the ingredients, cooking method or even the format of the recipe (i.e. turning a cake into pancakes), as long as your end result somewhat resembles the original recipe. Bonus points if you include the cost of the original vs. your Barefoot on a Budget spin!
Please post your Barefoot on a Budget entry by Thursday, April 30.
***Don’t forget to vote (in the comments) for which recipe we should tackle this month! Use the number of the recipe, if you like. The chosen recipe will be posted here Sunday night.***

I think this is a fabulous idea.
I haven’t been able to do as many of the recipes because of financial reasons.
My vote is for #2
Great idea! I vote #4.
Fun idea and such good choices. I’d want to make them all, but I’ve already tried a couple so I’ll vote for #1.
This is a great idea! I vote for #2
What a geat idea! #1 seems to be most challenging and all sound great but, I’ll go with #1 lobster rolls.
Fabulous idea…I opt for #5.
Hmmm…this is going to be a tough one – though a great idea for a challenge – I’m going to vote for the lobster paella #3.

I vote for #4 but would be happy to try any of the non-seafood ones. I am not a big fan and my husband has allergies to seafood.

The challenge is on! My vote is cast for #1.
I vote for the Lobster Cobb Salad Rolls.

My vote is for #1 Lobster Rolls.
I vote Number 3 – I have always wanted to make paella.

I was just watching her truffle butter mac and cheese episode and thought to myself…”sounds lovely but I will never make it!”. This is a great challenge. I would go with #1!
