Musings: Lemon Cake

  2. Although I love lemon (and I chose this recipe!), I thought there was a bit too much lemon. Next time I’ll cut back the amount of zest in the batter.

  3. Mine turned out really brown. Did anyone else’s?

    • Mine were not very brown at all – it was done right at the 45 minute mark.

      • I’m thinking it might have something to do with the dark loaf pan I used. Next time, I’ll try my lighter metal one and see if that helps.

  4. I used some pretty dark loaf pans too. I do have a convection oven which may have helped.

    • My oven runs hot on the bottom racks, so baking things in the center is always a challenge, especially things that need to be in for a while. I might have had better luck if I’d put the loaf pan on a baking sheet (or two).
