Musings: Chicken Chili (A Week with the Barefoot Contessa BRC)

So, how does Ina’s chicken chili stack up to others you’ve tasted? Were you tempted to make some changes of your own?

    1. Yummy, I have usually stuck to veggie and ground beef recipes, this was a welcoming change. I halved the recipe per the book, (12 servings) but kept the same amount of spice. It was perfect for adults , 2/3 kids thought it was too spicy. Also I did not have chicken breast on the bone and just used skinless boneless.

    2. i thought this was a nice change from my regular ground turkey chili as well! the flavors were great and although it was a little soupy the first night (for which i’ll reduce the liquid next time) the consistency of the leftovers was great. i also added a can of black beans for good measure. 🙂

    3. I halved the recipe, but then used just one large chicken breast. It made a nice portion for two people, and was yummy.

    4. we love this recipe! such a great twist
as always her recipes serve double the number so we had plenty to send home with our guests as well as for the freezer for quick dinners later!

    5. we loved this recipe … next time i’ll serve over rice

    6. With everyone being sick lately I am just getting around to making this (or any) recipe. I really hate to say it, because I have never had a bad Ina recipe, but this was awful.

I made it as directed and didn’t like it so I added a little chicken stock, cannelini beans, light red kidney beans and more chili powder + cayenne pepper. Still wasn’t great.

I gave my husband a sample.

Me: is there anything I could add to make it better?
      H: Flavor?
Me: I know! Should I take it to work? I hate to waste the ingredients + time.
H: Do you still want people to think you can cook?
