    Musings: Peanut Butter and Jelly Bars (A Week with the Barefoot Contessa BRC)

    There’s nothing like a good PB&J to make you feel like a kid again. What’d you think of these bars? Are you making any substitutions?

    1. OMG-I think I have gained 10 lbs this weekend making these recipes. this is by far my favorite. I have not let the kids try it yet I am going to surprise them in their lunch boxes. would not change a thing, but maybe a little more jam, I halved the recipe and thinking I should have added more jam

    2. I think more jam too. Even up to another half a cup, maybe? Mine were very good, but just a little dry.

    3. Mine weren’t dry at all. Actually stayed very moist and soft for three days (as long as the bars lasted!) The only thing that I didn’t measure was the jam, although I think I used a little under the suggested amount. I used preserves, and just sort of spread it out until it looked like enough. It didn’t spread as jelly might (don’t know about jam), so maybe that made the difference.

    4. These are NOT great straight from the oven, but they really benefit from a good chill in the fridge.

    6. These were extra rich and delicious, I was expecting more of a crispy bar cookie, but these are more ooey gooey, at least that’s how they turned out for me, which is fine since I’d rather have them soft anyway 🙂

    7. I made these for my daughter home from college and her friends. Surprisingly, they didn’t seem to be drawn to them. I think it’s because they are don’t look like they are going to taste as good as they do. No problems with the recipe, but I think a little more jam would have been better.

    8. i did not like this recipe … needed double the jam and a larger pan so the crust was thinner
