Musings: Roasted Summer Vegetables

There’s nothing like a taste of summer when it’s cold and gray outside.

Which veggies did you use? Any issues finding good produce?

  2. I felt like either these needed to bake longer or hotter. They were a little watery. However, I loved all the flavors of this, particularly that you put minced garlic in with the vegetables, and thyme.
