I just bought a butternut squash.

I love butternut squash and my husband hates it. I will probably just admit it from his portion of the vegetable pot pie, the butternut squash risotto is going to be a little more challenging. Maybe, I will make it for lunch!

Would it be OK for me to add some type of meat like Chicken in the Pot Pie? My bf won’t eat anything that doesn’t have meat and I’d hate to have to enjoy this alone. It sounds so comforting and perfect for Fall!
I picked the pot pie thinking I need to tackle crust (not a baker!) and thinking that it would be an easy one to adapt with what veggies you do or don’t like, add meat etc. So I think its fine to add! (I may not put in the pernod myself–still debating. Do you know how many bottles of things I don’t drink that I had to buy to put put in a recipe??!! 😉

Katie-Sweet Potatoes are a great idea but he hates those too!
Pernod is an anisette flavored liqueur. I have sambuca and am thinking of substituting it. Ouzo is another anisette flavored liqueur.
I’ve got a Musings post up for both recipes now so please post your questions, thoughts, etc about them in their respective posts. 🙂 I only ask this so that we have a comprehensive place for all questions, thoughts, etc.
I’m going to have to try the Vegetarian Pot Pie recipe for my wife. Sounds great!
